Last week I got some news that no one wants to hear. I was diagnosed with Hashimoto's disease, which is an auto-immune disease that causes hypothyroidism. There were some other health things going on as well, which overall have made me feel exhausted, overwhelmed, and a little crazy for the last year or so. It's nice to finally have some
answers but now a new challenge has begun.
Â
I started following the 90 day protocol found in
this book by Izabella Wentz which is basically no gluten, no dairy, no soy, no sugar, no caffeine, no alcohol. If you know me at all you will know that this basically means the end of the world. I love treats, I love Diet Coke, I love cooking fun delicious foods for my family. But I also hate how I have felt for the last little while so I decided to just jump
in. Â

One of the things I've struggled with lately is forcing myself to do anything I don't absolutely HAVE to do. It sounds silly, but it takes so much effort just to get to the grocery store. Well I started this eating plan on Monday, and still haven't made it to the store to buy all the specialty foods ... but guess what! I have been able to still eat on my plan and have healthy good meals and even made a yummy treat tonight (even gluten free, dairy free, sugar free cookies
are amazing when all you've been eating is green smoothies, chicken, and lettuce).Â

I'm grateful that I have stored a wide variety of foods that are free of additives, free of sugar, and even gluten-free. I didn't know I would need this
flour but I'm so happy I had some in my food storage, just in case.
