1/2 pint jars (makes about 25 jars)
- 1/4 cup Thrive scrambled egg mix (1 #10 can)
- 1 T. Thrive chopped onions (1 pantry can)
- 2 T. Thrive green bell peppers (1 pantry can)
- 2 T. Thrive mushrooms (1 pantry can)
- 2 T. sausage crumbles (optional - 1 pantry can)
- 1 T. cheddar cheese (optional - 1 pantry can)
When ready to serve, add 1/2 cup water to your jar and shake well. Spray a large coffee mug with pam spray and pour egg mixture in. Microwave for 30 seconds and stir. Microwave for 1 more minute. Eat! Thanks to my friend Tracy for the idea to do this in a jar.
The Scrambled Egg Mix is a little pricy so you can also do these without the eggs included and just add to fresh eggs in the morning as you scramble them. They will hydrate while the eggs cook and make a delicious veggie egg scramble. When I'm doing them without eggs I just use a little ziplock bag as shown above. You can also do with or without the sausage/cheese and add more veggies instead.
