I've been a bit busy this month as I took my son on an EPIC trip to Japan and then took about a week to recover when we got home. haha. I did finally get the meal-in-a-jar recipe for October finished and there are still a few days to grab the sale items if you want to make this one. I feel like I should have done a Japanese recipe in honor of our trip but fajitas sounded a little better after eating ramen for 7 days straight!

Thrive’s October monthly delivery specials contained beef dices and red pepper slices which to me says FAJITAS! However, I’ve done a Chicken Fajita meal-in-a-jar recipe before so I didn’t want this to be too similar. I found a recipe for a beef fajita rice bake and made my Thrive twists on it and I think it turned out pretty good. I hope you like it!
