Sorry for the delayed email this month.  My crew was touring Idaho, up through Glacier National Park in Montana, and all over Alberta, Canada for the past few weeks. It was great fun but I ran out of time to send the meal email before I left. Oopsies. Here's a pic of my cute family at Lake Louise, one of my favorite places on earth!

I often get asked about making recipes for special diets, food sensitivities, etc. Thrive's July monthly specials included beans, onions, and peppers so I decided to make a yummy vegan chili recipe and add some bulk and nutrition with a surprise ingredient that is also on sale. My hubby said it’s a “keeper” and he is normally a meat-lover so you know this one is tasty.
